Burgundian by birth and by heart, Sylvain Debord attended Lycée Viticole de Beaune in 1991. There he met many talented winegrowers including Nicolas Potel, with whom he has worked since 2006. In 1994, Sylvain attended the University of Burgundy within the Jules Guyot University Institute of Vine and Wine, where he followed in the footsteps of great names in oenology such as Professor Feuillat.
Sylvain contributed to several research projects until the mid-2000s, such as studying the natural defensive mechanisms of the vines, somatic embryogenesis in vitro, resveratrol and its derivatives, or even extracting undesirable molecules from oak. At the same time, he managed the Experimental Viticultural Center in Marsannay-la-Côte for the University of Burgundy. His contributions led him to collaborate with many professors and researchers, including Roger Bessis, Jean Claude Fournioux, Philippe Jeandet, Marielle Adrian, Hervé Alexandre and Régis Gougeon. He still maintains regular rapport with a college of experts close to research, teaching and training at uB.
In 2007, Sylvain contributed to the creation of the Domaine de Bellene in Beaune, Burgundy. His approach was a simple but ambitious one: converting conventionally managed plots to sustainability and establishing an ethos of respect towards the environment and consumers alike, all while maintaining oenological standards. His experience in the industry allows him to collaborate with the Bourguignon community on unlocking the full potential of different soils and terroirs, which will lead to even more exciting winegrowing opportunities. Inspired by the influence of his peers, Sylvain has never hesitated to apply unique methods in the vat room either, such as the vinification of red wines in the dark to preserve the polyphenolic potential, or even non-interventionism and gravitational mobilization. Unafraid to face the many challenges to come, Sylvain now looks to explore new strains resistant to climate change-induced drought but adapted to the Burgundian terroir.
